OREO-STUFFED CHOCOLATE CHIP COOKIES!
IS THIS REAL LIFE?
I know that many websites and blogs have variations of this recipe. I have no idea who initially thought it would be a fucking awesome idea to stuff deliciousness into something delicious - But that person is BRILLIANT!
I had never even thought about this until Chrissy Teigen posted a picture of the ones she made on her Twitter. Her blog is an inspiration to me by the way (www.sodelushious.com)
Anyways, I am making these for my boyfriend for Super Bowl. He actually INSISTS that I do and told me he will be sad if I don't. Plus, I wanna eat them to so I have no problem whatsoever baking a batch :)

Oven-Roasted Grape Tomatoes!
The tastiest pairing for your morning eggs.
You will need:
2 containers of grape tomatoes
1 tbsp. olive oil
1 tbsp. brown sugar
Preheat oven to 375 degrees
Line a baking sheet with parchment paper
In a bowl mix oil, sugar and tomatoes until all tomatoes are "glazed"
Place tomatoes on baking sheet and bake for 20 minutes
Sorry my picture sucks so hard. They are really delicious! But they will be EXTREMELY HOT when they first come out of the oven as they'll be filled with piping hot olive oil and juices. They taste best when they are freshly cooled from being in the the oven, however they are also fantastic with scrambled eggs :)

You will need:
1 big brussel of kale
3 carrots
3 celery stalks
1 can diced tomatoes
1 can corn
1 medium cooking onion
Parsley
Beef Bouillon OXO Reduced Salt
Garlic Powder
Salt
Pepper
Vegetable Spice (It's just VEGETABLE SPICE - figure it out!)
Get a pot big enough to hold 10 cups of water and all of those vegetables.
Put the stove on medium-low
Add 10 cups of fresh water.
Add 9 little satchets of reduced salt beef bouillon and stir (they look like ramen noodle seasoning packets, you find them in spice aisle)
Add all vegetables
Add all spices and keep tasting... I honestly didn't measure any of the spices and just kept tasting until I liked it :)
Cover and simmer for 30 minutes
EAT......
I store whatever is left on my balcony. Yup, put the lid on that bad boy and store it in your porch or on your balcony (cool weather climates only, duh) until you're ready to package it up and freeze it. I'll tell ya right now, you aren't going to fit a 10 litre soup pot in your fridge!

The recipe is mostly to taste. Keep tasting until it is a perfect blend of sweet and garlic-y! I would NOT recommend using any sugar substitutes for this either. Stick with plain old BROWN SUGAR. I made the mistake of using Stevia once and it went wrong, horribly wrong :(

Pork & Chuck Stuffed Bell Peppers!
Last night I noticed that I had an abundance of peppers lying around my fridge just waiting to go bad - I couldn't let that happen so I had to use them! What better way than to use them, then to stuff the shit out of them with deliciousness!?
Now in the original recipe it called for jarred cheese and red peppers (which would have been even more delicious) however, I only had green peppers and fresh mozzarella cheese. Shit, Beggars can't be choosers so I made do!

Why I stopped eating like a fat person trying to lose weight.
(Hint: Because I already look like an anorexic runway model)
As you may (or may not, whatev) have noticed, I am cooking and eating a lot of hearty, home-cooked meals these days as opposed to light, healthy and low-fat meals. I am still getting all of my protein (if not more) and am still getting a great intake of fruits and veggies - I'm just doing it in a way that is healthier for my body. And quite frankly, a WAY more delicious and satisfying way.
You see, I am 24 years-old and I weigh pretty much the exact same as I did in the 10th grade. I can eat and eat and eat and exercise and exercise and get super toned - but with no significant weight gain. I know, poor me right? But hey, every woman struggles with something. Don't judge.
Anyways, on and off for the past 2 years or so I've literally been eating like a fat person trying to lose weight, WHICH MAKES NO SENSE for an almost 5'9, 125lbs woman. Why did I not realise this before?! lol
Onward with change! Enjoy my new eating lifestyle as I continue to share it with you all :)

Baked Cajun Catfish & Chips
So I didn't feel like going out on Friday night because I am a lazy homebody! Instead I baked some catfish and potatoes. Nomnomnom! Recipe for the catfish is here: http://sodelushious.com/2011/07/08/meeeow-baked-cajun-catfish/
For the green beans I just heated up some olive oil and minced garlic for 30 seconds. Added the beans and coated them with the oil and garlic mixture. Poured a qaurter teaspoon of sugar into a glass with a bit of water and then added that to the beans and sauteed for 2 minutes covered. Removed the lit and cooked for another 1 minute until the liquid was evaporated. Et voila! So freaking delicious!

Line a ramekin (preferably a bigger one than I used) with thinly sliced ham. Fill with your favorite ingredients. Crack an egg on top. Bake for 25 minutes at 375 degrees. BAM! (recipe from www.sodelushious.com)

Easy Gingerbread Cookie Tree
I love baking and cooking! This gingerbread tree is so pretty. I found the recipe in this month's Chatelaine and am totally going to bake this when my little sister comes to visit :)

Korean BBQ for 28 years.
We celebrated Dan's 28th birthday on Thursday at his mother-in-law's and let me tell you it was fantastic as per usual. She is from Japan, where she used to own a couple of restaurants and is one of the most amazing chefs EVER! Nomnomnom...
Now, I know we're having Korean BBQ at a Japanese woman's home but that just goes to show her culinary expertise. Any style or type of food and she can nail it every time! I forgot to write down the names of all of the dishes because I was about a half bottle of Chardonnay in when we started eating, but next time I won't suck so hard, promise.
We started with this salad. It had tiny cucumber slices, prawns (I ate them all first), and thin rice noodles and a really light vinegar based sauce on top. It was cool, refreshing and delicious.
Then we had this delicious sliced bean salad. The beans were all cut length wise in half. there was a sesame seed dressing and sea salt over top of them. Holy YUM Batman!

Then it kept getting better....
I present to you: Broccoli Grape Salad. Broccoli florets thinly sliced with red seedless grapes sliced in half, topped with a mayo-sesame dressing and garnished lightly with sesame seeds. This dish just shows how important detail is. Do you have any idea how long it takes to thinly slice broccoli?! No, you don't.
We then had these thin potato pancakes that had grated carrots and onion in them. They were topped with a BBQ sauce of sorts, dried fish and parsley :D
Time to start grillin'
We grilled cow tongue, thinly sliced prime rib and a variety of fresh vegetables.
Dan was the grill master for the night - Which worked out perfectly because he was given a table top grill just like this one for his birthday :)
It was amazing. After too much food and wine it was finally time for ICE CREAM CAKE!
